Meet our team

Manager

Sam Toledo

Sam has been a restauranteur for over 40 years opening restaurants with business owners and eventually for himself in 1991. He has been part of culinary expeditions in Mexico and now works alongside his son Jesse and Daughter Carmen.

Vice President

Jesse Toledo

Jesse is the Senior Vice President and Co-Owner of Toledo’s Milburn. He has worked in the restaurant industry for over 31 years. Jesse is a graduate of Fresno State in business and runs the corporate office and business development.

Operations Manager

Carmen Toledo

Carmen has worked in the restaurant industry for 21 years. Carmen runs all of the front of house operations overseeing 24 head managers for all 4 locations combined. Carmen also oversees all sales and profit margins.

Head Cook

Javier A.

Javier has been working for Toledo’s for over 10 years. He has worked his way up from Busser to Bartender to Chef and Head Manager. Javier understands every aspect of Toledo’s culture and philosophy of service.
